So due to numerous influences I decided that a Red Velvet cake would be the first scratch cake with the new mixer. Big mistake. I don’t know if it’s just a tough recipe or if I just suck at following instructions now but so far, not good...

The sides are burnt and the middle fell. I was supposed to use three 8 inch pans, but only had two 9 inch. After the 25 minutes of baking the centers were raw (liquid) so I continued baking till the “toothpick” came out clean. Looks pretty bad. I am debating frosting it or tossing it… I am gonna try something easier this weekend. Like cinnamon bread. Mmm.

FROST!  FROST!  FROST!  FROST!  But don’t be so HARD on yourself! You made cakes! from scratch! I’m all kinds of impressed. smile

how bad can it be? smile It doesn’t look as bad as you may think. Besides, every red velvet recipe is different. Paula Deen… I don’t know about her. Her recipe seems a little sacriledge with the marshmallows and the coconut.  I also find recipes with slightly more cocoa in them seem to be richer and less like a red vanilla cake.

You can do eeet.  I think my mom might have a recipe in the little box she left me. I’ll see if I can dig it out and we’ll try again sometime. But TASTE it, it’s probably good!

I frosted. It was tough with those burnt sides and the dip in the middle. Not the prettiest cake that’s been on my counter! The frosting is *really* good, but I omitted the nuts and coconut (EW! Coconut!) We’ll see how it tastes later.

I just know it’s going to make an audible crunch sound when sliced. Sigh. At least I am not the only one with this result. I should have read all the comments on it first!
